Healthy Pizza Soup Recipe
This is a better way to eat pizza and it is full of that yummy pizza taste! Pair it with a green salad and you won’t feel cheated at all.
1 TBLSP extra virgin olive oil
8 oz fresh mushrooms, sliced
1 onion, chopped
1 bell pepper, chopped
2 cans stewed tomatoes, (14.5 oz each)
32 oz beef stock, 0r 1 can of beef stock and 2-3 cups water – experiment with the flavors
1/2 tsp dried basil
1 can garbanzo beans (I add these for mainly for texture and to stretch the soup a bit farther)
1 can sliced black olives (big can if you love olives, small can if you like olives, or omit all together)
8 oz turkey pepperoni (I use Applegate Farms brand), sliced into quarters
Optional: 1 lb ground sausage or beef, browned and well drained
Shredded mozzarella cheese for topping
Saute mushrooms, onions, and green pepper.Add tomatoes, stock, basil, beans, olives, and meat. Cook until heated through. Serve with shredded mozzarella cheese sprinkled on top.
