Cookies for Breakfast
Watching Megyn Kelly one day, I saw an episode with a cook who was making no bake, healthy, cookies. She made them look and sound so delicious, I thought I would try the recipe, and I am HOOKED. They are great for in the morning with a boiled egg and a piece of fruit or if you want an afternoon snack or a healthy dessert. They have been such a great, energy packed treat for me that I just had to share the recipe! This recipe makes about 9-10 cookies, so I triple the recipe and make enough for both my mom and I for a week or more. They keep really well in the fridge. Each cookie is around 140 calories and I add in raw pumpkin seeds and chia seeds, walnuts and/or pecans. Hope y’all enjoy!
